TOMATO SOUP 🍅
-INGREDIENTS-
*12-14 tomatoes, quartered
*1 red pepper, quartered
*1 yellow onion, quartered
*1 bulb garlic
*32 oz Broth of choice
*1/2 cup heavy whipping cream
*1/4 cup balsamic glaze
*Fresh basil (to taste)
*2 tbsp sugar
*2 tbsp tomato paste
*Seasonings (measure w/ heart): thyme, red pepper flakes, garlic powder, onion powder, oregano, s+p.
-DIRECTIONS-
-add tomatoes, onion, pepper, and bulb of garlic to a sheet pan. Cover with olive oil generously. Season generously. Add fresh basil sprigs on top. Roast at 350 for 45 mins.
-add veggies to a blender, blend until desired consistency, add puréed veggies to a pot
-add broth, cream, sugar, tomato paste, balsamic glaze, and seasonings to taste. Simmer on low until heated through.
-to serve top with more basil, cream, and balsamic glaze.
LASAGNA SOUP 🍝
-INGREDIENTS-
*1 lb ground Italian sausage
*1 yellow onion, diced
*14.5 oz Italian diced tomatoes
*24 oz jar spaghetti sauce
*48 oz beef/chicken broth (enough to cover noodles)
*1 box lasagna noodles
*15 oz ricotta cheese
*1/4 cup parmesan cheese
*1/4 cup heavy whipping cream
*1/4 cup mozzarella cheese
*2 tbsp fresh parsley
*Seasonings (measure w/ your heart): garlic powder, onion powder, Italian seasoning, red pepper flakes, s+p
-DIRECTIONS-
-brown sausage and onion in a pot with olive oil + seasonings
-once cooked through, add diced tomatoes, spaghetti sauce, and broth. Bring to a boil.
-once boiling, add lasagna noodles by breaking them up into smaller pieces
-while the noodles are cooking, prepare you cheese mixture by adding the ricotta, parm cheese, mozzarella cheese, heavy cream, fresh parsley, and seasonings. Mix to combine.
-once the noodles are cooked, stir in the cheese mixture. Simmer on low for 5-10 minutes.
-serve with extra cheese on top
POTATO SOUP 🥔
-INGREDIENTS-
*4 lbs mini yellow potatoes, in quarters
*32 oz chicken broth (more to thin out if needed)
*16 oz heavy whipping cream
*1/4 cup sour cream
*8-10 slices of bacon
1 yellow onion
*Olive oil
*1 bulb of garlic
*Seasonings (measure w/ heart): thyme, rosemary, garlic powder, onion powder, parsley, s+p
*Toppings (optional): cheese, bacon, chives, sour cream.
-DIRECTIONS-
-Cook bacon slices in oven on a sheet pan
-Add potatoes, garlic bulb, and seasonings – massage into bacon grease. Add olive oil if needed.
-roast at 425 for 30 mins. Remove, stir, and add a chopped onion. Return to oven for 30-45 more minutes, until potatoes are cooked through.
-once the potatoes are crispy, add to a blender with roasted garlic, chicken broth, cream, sour cream, and seasonings, blend to desired consistency. (I left some potatoes whole)
-add chicken broth/cream to thin out if needed
-add to a pot and simmer on low until hot
CROCK POT WHITE CHICKEN CHILI 🌶
-INGREDIENTS-
*10 oz can green enchilada sauce
*10 oz can fire roasted rotel
*14.75 can fire roasted corn
*(2) 15.5 can cannellini beans
*64 oz chicken broth
*8 oz cream cheese
*1/2 cup sour cream
*Bunch of fresh cilantro (add to taste)
*4 boneless/skinless chicken thighs
*Minced garlic (to taste)
*Chopped onions and peppers (optional)
*Seasonings: tajin, chili powder, cumin, paprika, cayenne pepper, garlic powder, onion powder, oregano, s+p
*Toppings: cheese, guac, sour cream, tortilla chips
-DIRECTIONS-
-Add enchilada sauce, rotel, beans, corn to the bottom of your crock pot. Top with chicken.
-Add seasonings to the top of your chicken.
-cover with chicken broth
-cook on low 6-8 hours or high 4-6 hours.
-at the last 1/2 hour of cooking time, remove chicken and shred – add back to crock pot.
-in a bowl, mix together cream cheese, sour cream, and some broth from your crock pot then stir the mixture into your soup.
-stir in fresh cilantro
-continue cooking for last 1/2 hour.
-top with sour cream, tortilla chips, guac, cheese, etc.
